Chugokugakuen","bibliographic_titleLang":"en"}]}]},"item_10002_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"世界三大穀物の中のひとつの米は世界中で食べられているが,そのほとんどがアジアで生産されている.米は大きく分けてジャポニカ種とインディカ種があり,日本で主食として食べられているのはジャポニカ種であるが,世界ではインディカ種のほうが主に食べられている.本研究では,そのジャポニカ種を主食として食べている日本および韓国に着目し,その生産量,消費量,米の調理方法などについて検討した.\n その結果,両国ともに米の自給率がほぼ100%であったが,米の生産量も消費量も減少し続けている.この原因としては両国の経済状況の変化,米に対するイメージ,食行動の変化が原因となっていると考えられる.\n しかし,両国ともに食料のほとんどを輸入に頼っており,このままでは今後,食料の確保が困難になる可能性がある.また,小麦アレルギー及び,小麦グルテンが原因で引き起こされるセリアック病の患者が増える可能性があることなどから,米に対するニーズは高まるものと考えられる.米粉をさらに普及させるためには,米粉の価格の高さ,米粉の扱いにくさを克服すること,誰でも同じように,簡便に作ることが出来る調理方法の確立が重要だと考えられる.","subitem_description_type":"Abstract"}]},"item_10002_full_name_3":{"attribute_name":"著者(英)","attribute_value_mlt":[{"names":[{"name":"Eri
