Chugokugakuen","bibliographic_titleLang":"en"}]}]},"item_10002_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"これまで食べ物の味覚とおいしさについての研究や,おいしさと感覚受容器の相互関係に関する研究が行われてきている。また,食品の形状が味覚イメージに与える影響を調べた報告もされている。我々は特定の形を特定の味や食感と結びつける傾向にあり,似た感覚刺激を,同類味覚刺激をもつ物質と判断すると推測される。このように,味覚受容体以外の感覚受容器への刺激が食べ物の味の感じ方に大きな影響を及ぼすことを感覚的には理解している。そこで,本研究では,味覚受容体の刺激以外の感覚刺激が,食べ物の味に及ぼす影響について検討した。今回の研究では,丸い形状よりも,尖った形状のものをより苦く感じると仮定し,形状の違う2つのチョコレートの官能評価を実施した。試料に星形(五芒星形)およびハート形のチョコレートを使用した。また,より形状に差をつけるため,星形(六芒星形)および丸型を使用した調査も実施し,さらに同様の形でチョコレートのカカオ量を変えた調査も実施した。今回の結果では,同量のカカオ量では,チョコレートの形と苦味の感じ方の間に有意な関連性をみることはできなかった。しかし,連続して試食した場合には,チョコレートの形の違いに関係なく,はじめに食べた形をより苦く感じることが示唆された。","subitem_description_type":"Abstract"}]},"item_10002_full_name_3":{"attribute_name":"著者(英)","attribute_value_mlt":[{"names":[{"name":"Mami
